HERE S The way to ASSEMBLE:

Roughly layer the lamb chops using the potatoes.
Poke the garlic cloves between your lamb and potatoes.
Sprinkle with fresh or dried rosemary and oregano, pepper and salt.
Pour wine and water down one side so you don t wash off the seasoning.
Scatter chopped tomatoes or tomato puree over lamb and potatoes.
Finish with a couple of grated pecorino cheese sprinkled over.
Scatter with breadcrumbs to soak up any excess liquid.

Cover baking dish with foil and bake for about an hour or so at 200 Celcius. Remove foil for the rest of the cooking and bake until it is all totally tender, probably another hour or so.

Which is about as simple as it gets.
